Batch 3 is a very dark syrup, with what I would describe as a "Strong Robust Maple Flavor".
This is one of the strongest maple flavor syrups we have had in a while.
I was a bit concerned that it may be somewhat bitter which can happen when a late season syrup is very dark. Fortunately this is not the case, and Herb's Midnight Special goes well with everything.
*If you are considering cooking or baking with maple syrup I would highly recommend Herb’s Midnight Special. The stronger the maple flavor is the more likely it is to carry over into what you are cooking or baking. Light syrups when used in baking or cooking retain the sweetness, but tend loose the maple flavor.
